Tasting Notes:

Kimoto is a traditional style of sake-making where the rice is hand turned to allow fermentation by wild yeast in the air. Subtly floral, softly sweet, and delicate on the palate. There is some complex mingling of flavor over a sweet spring water-like body. Some earthy, nutty, and floral notes intermingle but they are all very mellow. Very nice in a very delicate style.
